These are paleo friendly and are so easy to make. This is one of those lunches or even snacks that you can make when you want to eat something healthy, but don’t want it to take too much of your time. Top with some chili flakes and your favorite hot sauce and enjoy!

Tuna Stuffed Avocados

These tuna stuffed avocados are paleo friendly and great for just about anything. You can prep and eat them for lunch or toss them together in a few minutes for a quick and healthy snack on the go. Another great part is they are so customizable. You can add just about any toppings that you like and enjoy.

Ingredients
  

  • 1 can Albacore Tuna
  • 3 tbsp Mayonnaise or Light Mayonnaise
  • 1/2 Jalapeno
  • 6 Cherry Tomatoes
  • 1/4 Red Onion
  • 1/4 Cucumber
  • 1 Avocado
  • Red Chili Flakes
  • Salt
  • Pepper

Instructions
 

  • Drain can of tuna and shred in a mixing bowl
  • Dice jalapeño, tomatoes, red onion, and cucumber and mix with tuna
  • Add salt and pepper to taste
  • Split avocado in half, remove seed, and spoon in your tuna mixture
  • Top with chili flakes and hot sauce to taste

Notes

You can add just about any toppings that you like and enjoy. Substitute mayonnaise for either light mayonnaise or non-fat greek yogurt and you’ll have an even lower calorie version with the same amount of delicious flavor.
