Vegan Dunkaroos

Do you guys remember those little snack packs you would get in your lunch and you would be so happy when you saw them? You know the little circular vanilla cookies with the frosting with the rainbow chips in it? Dunkaroos is what they were called. Well, I have created a vegan version of one of my childhood favorites! It brings back so many memories, and I thought we should have a healthier version of them! I hope you enjoy!

Prep Time 25 minutes

Equipment

  • 1 Hand Mixer or Stand Mixer

Ingredients
  

Vegan Vanilla Shortbread Cookies

  • 2 1/2 cups Gluten Free Flour
  • 1 1/2 sticks Vegan Butter
  • 1 cup Maple Syrup
  • 1 tsp Vanilla Extract
  • 1/4 tsp Ground Vanilla Bean
  • 1/4 tsp Salt

Frosting

  • 1 stick Vegan Butter
  • 1 cup Wholesome Organic Powdered Sugar
  • 1/2 tsp Vanilla Extract
  • 1 tbsp Non-Dairy Milk
  • Rainbow Sprinkles

Instructions
 

  • Preheat oven to 350F
  • Cream the butter with mixer until creamy
  • Add maple syrup, vanilla, vanilla bean, and salt – Mix until combined
  • Add flour and combine with a spoon
  • Combine dough into a ball with your hands and divide ball in half
  • Shape each ball into a flat disk and wrap in plastic wrap
  • After the dough is done chilling, place the dough between 2 pieces of parchment paper roll it out to about 1 1/2 inches thick with a rolling pin
  • Cut into desired shapes!
  • Place them on a baking sheet with parchment paper and place in the oven for 10-12 minutes. (they should look golden brown)
  • Lastly, for the frosting, cream together the butter, powdered sugar, vanilla, and non dairy milk until combined
  • Top with sprinkles and enjoy!
