Gluten Free/Dairy Free Taco Casserole

Switch up your next Taco Tuesday with something a little bit different. This spaghetti squash based casserole packs all the flavor of a traditional casserole. Top with some avocado and hot sauce and enjoy!

Gluten Free/Dairy Free Taco Casserole

Ingredients
  

  • 1 Spaghetti Squash
  • Ground Turkey/Beef
  • 1 small White Onion
  • 2-3 tbsps Olive Oil
  • 4 tsps Minced Garlic
  • Taco Seasoning
  • Salt
  • Pepper
  • Cumin
  • Paprika
  • 1/3 cup Black Beans
  • Minced Jalapeños
  • Lime
  • Vegan Cheese
  • Vegan Sour Cream

Instructions
 

  • Preheat oven to 400ºF
  • Cut squash in half and scoop out seeds
  • Drizzle Olive Oil, Salt, Pepper on squash
  • Place face down in over for 40-45 mins.
  • Shred squash and let cool
  • Olive oil to pan with garlic and onions until translucent
  • Add meat of choice, black beans, and seasoning to pan
  • Take off heat, once cooked and add shredded squash
  • Pour mixture into a casserole sit and top with began cheese
  • Bake in oven for 15-20 mins.
  • Top with desired toppings and Enjoy!

Notes

All seasonings are to taste. As with Jalapeños for desired spice level.
