Gluten Free/Dairy Free Taco Casserole
Switch up your next Taco Tuesday with something a little bit different. This spaghetti squash based casserole packs all the flavor of a traditional casserole. Top with some avocado and hot sauce and enjoy!
Gluten Free/Dairy Free Taco Casserole
Ingredients
- 1 Spaghetti Squash
- Ground Turkey/Beef
- 1 small White Onion
- 2-3 tbsps Olive Oil
- 4 tsps Minced Garlic
- Taco Seasoning
- Salt
- Pepper
- Cumin
- Paprika
- 1/3 cup Black Beans
- Minced Jalapeños
- Lime
- Vegan Cheese
- Vegan Sour Cream
Instructions
- Preheat oven to 400ºF
- Cut squash in half and scoop out seeds
- Drizzle Olive Oil, Salt, Pepper on squash
- Place face down in over for 40-45 mins.
- Shred squash and let cool
- Olive oil to pan with garlic and onions until translucent
- Add meat of choice, black beans, and seasoning to pan
- Take off heat, once cooked and add shredded squash
- Pour mixture into a casserole sit and top with began cheese
- Bake in oven for 15-20 mins.
- Top with desired toppings and Enjoy!
